How the chart works

The main purpose of this chart is to roughly illustrate the different costs on our coffee purchasing operations. Targeting, as the main transparency indicators, what the producer gets, and what we get out of the operation.

glossary

Farmgate: Is the price the farmer gets paid per KG or LBS of green beans.

FOB (Free on board): It represents the cost of coffee at the port of origin, ready to be shipped. It includes the cost of the green coffee beans, processing, packaging, domestic transportation to the port, and exporter's fees, but not the cost of shipping and insurance to the destination country.

We convert all the data to euro and kg for better understanding.

building strenght

Behind El mural coffee are about 25 producers. They rely solely on coffee production and have mastered various processing methods. Farmers in the region are entrepreneurs with a deep-rooted passion for coffee, carrying on a family tradition that spans generations. Many are 2nd, 3rd, or even 4th generation farmers. The farms are located in an environment with excellent agro-climatic conditions, allowing them to grow avocados, cacao, citrus, plantains, and bananas in addition to coffee. The nutrient-rich soils are fertilized in three rounds per year, keeping the plantations healthy and highly productive. The steep slopes of the farms make harvesting challenging, often requiring pickers to transport coffee cherries or parchment by mule or horse before better roads were available.

El Mural is a blend of coffees from two main cantons: Citalá and La Palma. Both of these are part of the Montecristo Trifinio, a tri-border national park shared between El Salvador, Guatemala, and Honduras. Designated as a biosphere reserve in 2011, it is an area of incredibly rich biodiversity.

Pacamara

Originated from a cross between Pacas and Maragogype.

Grown primarily in El Salvador, where it usually stands out in local competitions.

Pacamara is a large-bean variety known for its complex and expressive cup profile. It typically presents a pronounced, vibrant acidity—often citric in character—bringing brightness and structure to the cup. Flavor notes commonly include red fruits, layered with subtle baking spice nuances.

processing

At El Mural, they start with a selective harvesting, ensuring only ripe cherries are picked. The cherries then go through a floation process to clean them and remove any that are damaged by insects or adverse weather conditions. Following this, they undergo a 24-36hr cherry fermentation before being dried in patios or raised beds, which can take up 30 days.
